Step 1 - Poach the eggs. If you don't know how, check out this quick video. Chef Gordon Ramsey explains it better than me. Or get a poaching pan. Makes it easy, less water and it takes 3 minutes. Ain't nobody gonna judge you 'round here.
Step 2 - Heat a tablespoon of olive oil in a small sauce pan. Add spinach and salt & pepper (to taste). Saute for 2-3 mins until fully cooked and softened.
Step 3 - While the spinach is cooking, split the English muffin and pop in the toaster for the amount of time you like yours done. I like mine softer rather than extra crispy.
Step 4 - Straight up put the Morning Star sausage patties in the microwave. The timing is on the box. Sure you can heat them up in the pan with the spinach if you like, but either way, get them warm.
Step 5 - Mix the mayonnaise, Yellowbird Serrano hot sauce (to taste), squeeze of lime and fresh ground black pepper (if you're fancy) to make a fake hollandaise sauce. I specifically say Yellowbird, because it is the best. I have all the flavors if you must know.
Step 6 - Assemble! Slice the avocado and stack it like this: muffin, sausage, avocado, egg, spinach, fake hollandaise. Or however you want. I'm not eating it, you are. Enjoy!
